I woke all the kids up, told them to go brush their teeth and hop in the van. We all drove to the farm together in whatever we fell asleep in last night. I just couldn’t wait to get there! Look at our yummy delicious goodies…

Asian Lettuce Mix :: Peanut Chicken Salad

Baby Pak Choi :: sauteed with oyster sauce, fresh minced garlic, & fresh grated ginger; served with pre-made (frozen) potstickers, OR if Papa is up to it, homemade shumai

Bibb Lettuce and Red Bibb Lettuce :: Asian Lettuce Wraps

Watercress :: Salmon with Wilted Watercress and Balsamic Drizzle

Baby Kale :: Baby Leaf Curly Kale Mash, served with whatever fish is looking good

String Beans :: Potato Soup with Sausage and Green Beans

European Long Slender Cucumbers :: sliced, served as a side

Cilantro :: Black Bean Mango Salad, served with pita wedges…

Black Bean Mango Salsa.SofiasIdeas

BLACK BEAN MANGO SALAD (via my Juice Plus+ buddy, Barbara)

1 can (16 oz.) black beans, drained and rinsed
2 cups mango, diced
1 cup of sweet red bell pepper, diced
6 green onions, thinly sliced
¼ cups cilantro leaves, chopped
¼ cups fresh lime juice
1 TBL olive oil
1 seed Jalapeno pepper minced (optional)
Salt to taste

Well, that’s the plan anyway. Stay tuned and see how it all turns out! I love this feeling of accomplishment… my menus are planned, my grocery lists are made, and my coupons are clipped. Meal planning around our CSA (Community Supported Agriculture) share definitely fits into Sofia’s Ideas on Simplicity, Frugality, and Frivolity…. all with an Eco-Mentality!

We also had baby bok choy in our box, as well as kale, white sweet potatoes, golden delicious apples, zucchini, and butternut squash. I have no idea how or when I’ll use all of it. I need to be more organized like you!

White sweet potatoes? WOW! Never even heard of that. Will you come back over & share what you ended up doing with those? I’d really be interested.

Organized? Not so sure. I just love those veggies so much & I know how much love goes into growing them that I want to make sure I eat ‘em all. But when I look around after I’m done meal planning & grocery list making & coupon clipping, it looks like a tornado came through the house!!
